This class is usually held on WEDNESDAY to enjoy the Etla Market.

  • We start at 9 a.m. at a designated pick-up point in the Centro.
  • The students are taken on a tasting tour by one of our staff where, they will try exotic foods and meet the charming people of the market.
  • After a light lunch, we head out to Rancho Aurora for a lecture on Oaxacan cuisine and a presentation of the day’s ingredients.
  • Then everyone grabs an apron and we create and enjoy a five-course meal.

*Transportation back to Oaxaca City at around 6 pm.

Price of the Class with Market Tour $85.00 USD or the currently exchange rate from the oficial website of the Secretaryship of Finance and Public Credit in Mexican pesos.

Deposits/Payments:

To hold your spot in the class a deposit is required. You can also choose to send full payment in advance of the class.  If you have a remaining balance, payment is due at the beginning of the class.  *Reservations at the bottom of this page.

Cancelation and Refund:

Sometimes plans change and one of us has to cancel.  Although we hate to disappoint our students, sometimes we must cancel a class. We require a minimum of 6 students to hold class and we wait until Monday immediately before the class to allow time for students to register before making the decision to cancel. If Seasons of My Heart cancels the class, you will receive a credit towards a future class (good for two years) or a full refund of the amount paid, whichever you prefer.  For classes cancelled by the student a refund of the amount paid will be given provided we are notified by phone or in writing 5 or more days prior to the class. Please contact us at info@seasonsofmyheart.com if you must cancel. If you must cancel on the day of class, please call us at 044 (951) 508-0469. There is never a charge to reschedule a class.

Where exactly is Seasons of My Heart Cooking School located?

Rancho Aurora is located between two small villages San Lorenzo Cacaotepec and San Felipe Tejalapan, northwest of Oaxaca City in the State of Oaxaca, Mexico. Here the MAP.

 

What happens in a day class?

Your day begins at 9:00 am at our new office , Calle 5 de Mayo 408, interior number 7-2, Colonia Centro/ new office in downtown , where our driver and transportation  will meet you.  Then round about 9:10 or 9:30 am our transportation takes you to our next stop. Our next stop is the market in Etla, where you meet one of our teachers for a tour, tastings and light lunch. Then it’s off to Rancho Aurora, home of Seasons of My Heart Cooking School, for a discussion of Oaxacan cuisine with an emphasis on the food that will be prepared that day followed by a hands-on cooking class.  Around 5pm, everyone sits down to enjoy the fruits of their labor and then around 6:30, the driver takes you back to town.

 

I don’t have a full day to spend but would like to take a class.  Can I do that?

Yes!  You may join us for the lecture and hands on cooking class portion of the day.  You would need to provide your own transportation to Seasons of My Heart Cooking School, arriving about 1 pm.

 

Who teaches the day classes?

A staff member will meet you at the market for the tour.  All of our guides speak English and are highly qualified to guide you through the market as you meet the vendors and taste their wares.  Susana Trilling typically conducts the lecture portion of the class and supervises the cooking portion.  When she is not available, another quite capable member of our staff leads the lecture and cooking portion of the class.  Classes led by another staff member are identified on the website.

 

I can barely boil water, so the cooking part makes me a little nervous.

No worries! We have plenty of staff on hand to help you, recipes to guide you and the lecture portion will address any tricky parts.  Your fellow students are also typically eager to help.

 

What is on the menu?

Our Wednesday classes usually feature an appetizer, soup, salad, Mole or main dish with vegetable and rice and a dessert, featuring seasonal ingredients.  They change constantly so it is possible to take more than one class and have a different menu each time.  We try to accommodate dietary restrictions/requests as much as possible, but please let us know in advance.

 

How will I know if a class is cancelled?

You will receive an email from us prior to the class a few days before.  You should also get an email on the Monday before the class reconfirming the location of the meeting spot and time.

I want to take a class but don’t have my hotel reservations yet.  Should I still complete the registration form?

Yes, please send along the form and the deposit to hold your spot in the class and forward the lodging information when you have it.  Our classes do fill and the deposit will reserve your place in the class.

 

Will there be any other fees/expenses associated with the class?

Seasons of My Heart Cooking School has a small store on site with a variety of Seasons of My Heart products (mole paste, chocolate, jellies, chintestle paste, sea salt), herbs, pottery, wooden handicrafts, weavings, Susana Trilling’s cookbooks, etc.  Many students enjoy shopping at the store especially if ingredients for their favorite dishes are hard to find at home.  Payment for purchases must be in pesos or US dollars.  Unfortunately, we are unable to take credit cards or accept personal checks in Oaxaca. You also may want to purchase items at the market in Etla, which would also require cash, in the form of pesos.

Tipping the guide at the Etla market is welcome. $2.00 to 3.00 dollars per person is fine. Thank you.

 

I would like to arrange a private tour with Susana for a group of friends.  Can that be arranged?

Absolutely!  We do ask that you contact us well in advance with possible dates and interests of the group.  Susana has done tours for groups of chefs, family groups and friends of varying lengths of time within Oaxaca and also in other areas of Mexico.  Private classes can also be arranged.
