Salsa Cruda de Piña

Fresh Pineapple Hot Sauce

Had a craving to make a salsa cruda with a more creative slant using fresh pineapple and raw tomatillos instead of grilled or boiled, which is the usual case here in Oaxaca. I combine them with tomato, onion, green chiles, and cilantro, which make up the traditional ¨a la Mexicana¨ ingredients. You can try this with pork or chicken tacos, but we found it great with fish as well!

Ingredients

  • 7 tomatillos, cubed (1 cup)

  • 1 cup of fresh pineapple, cubed

  • 1 cup ripe tomatoes, cubed

  • 3 chiles serranos, roasted, peeled and seeded, finely chopped

  • ¼ medium white onion, finely chopped

  • 2 tablespoons cilantro leaves, finely chopped

  • ½ teaspoons sea salt, to taste

  • 2 tablespoons pineapple juice

Method

In a small bowl mix together all the ingredients, season with salt, and mix in the pineapple juice. Serve at room temperature.
