Mushroom Foraging Course
Uncover the Gems of the Forest
This course is a week of foraging in four different microclimates of the Sierra Madre Norte. On this trip we gather mushrooms in the mornings and transform them into delectable treats with local cocineras in the afternoons. A local mycologist joins us to identify each variety.
We hike with local experts who show us their favorite foraging spots. July is the best month for funghi! Have fun scooping up trout at a local fish farm, where we cook trout, mushrooms and other local produce in various ways. If rain has been abundant enough, we will attend the annual Feria de Hongos in Cuajimoloyas. We also will take part in a temazcal (preHispanic steam bath with hot rocks) with local curanderas
(herbal healers). We end the week at Seasons of My Heart Cooking School, preparing a five course meal based on mushrooms for our farewell celebration.
The tour starts and ends in Oaxaca City.
