Día de Muertos

Participate in a mystical and magical celebration! Immerse yourself in ten days of learning about this wonderful traditional holiday that is literally a feast for the eyes, as well as a gastronomic experience. The hands-on cooking classes range from contemporary holiday foods to traditional chocolate, mole, and bread making. We build a classic Day of the Dead altar and make trips to village homes, graveyards, mezcal palenques. Come and dance with the “muerteros” and have a mezcal to fully participate in this mystical and magical tradition.

Learn the secrets of the Mexican & Oaxacan Cuisines

Come and join us for this action-packed 6 day venture into Oaxacan gastronomy and culture, led by Chef Kaelin Trilling and her expert staff at Seasons of My Heart Cooking School. You will learn the secrets of Oaxacan, pre-Hispanic, Yucatecan and Contemporary Mexican cuisine. This is our  culinary “boot camp” and  you are immersed in the kitchen for a week with other culinary professionals, passionate about Mexican food. You will leave this course with an incredible wealth of knowledge and recipes, plus learn the inside story about heritage corn and nixtamalization, native herbs, chile flavor profiles, mezcal and craft beer and salting techniques.

Mushroom Foraging

Leave all your stress behind as we embark on a  week of touring and foraging in four microclimates of the Sierra Madre Norte. On this trip we gather mushrooms in the mornings and transform them into delectable treats with local cocineras in the afternoons. A local mycologist will help us identify each variety. Staying in cabañas in the forest, this is a total immersion course,  as we hike through the woods, and have a full range of mountain encounters.
