We’ll visit the charming and historic city of Valladolid, a beautiful city steeped in history that fills Yucatán with pride. This vibrant yet peaceful city is the perfect introduction to the region’s rich culture and traditions. The tour concludes on the serene shores of Isla Holbox, a tropical paradise where you'll have time to relax, recharge, and reflect on your experiences, surrounded by stunning natural beauty.
Authentic Culinary Experiences
Under the guidance of Chef Kaelin Trilling, explore the diversity of ingredients and the ancient, pre-Hispanic Mayan cooking techniques still used today. Discover ancient methods like pib (underground cooking) while participating in intimate cooking classes with local chefs. Highlights include crafting Cochinita Pibil, a succulent suckling pig dish rubbed with achiote and sour orange, wrapped in banana leaves, and slow-cooked underground for 16 hours. You'll also enjoy market tours, hands-on cooking demos, and authentic dining experiences with Chef Trilling’s friends and family, who share their culinary knowledge and hospitality.

Experience the magic of the Yucatán by exploring iconic Mayan ruins, including Chichén Itzá—one of the Seven Wonders of the World—along with Labna and Uxmal. Swim in sacred cenotes, believed by the Mayans to purify the soul, and visit artisan communities to witness extraordinary ceramic artistry. In Campeche, immerse yourself in the vibrant markets, sample unique regional ingredients, and enjoy a cold chocolate and chili tasting, a tradition rooted in ancient Mayan culture.

Each day brings new opportunities for exploration and joy. Drive along the famous Ruta Puuc, visit the ancient Mayan sites with an expert guide, and connect with the local community. Experience a horse-drawn buggy ride to a secret cenote at a historic hacienda, where you'll learn traditional recipes from a family who has shared their culinary heritage for generations. In Celestún, cruise through the mangrove reservoir to see the famous pink flamingos and native birds. Kaelin Ulrich
Kaelin, the son of famed chef and the founder of the Seasons of My Heart cooking school Susana Trilling, was raised in Oaxaca and developed a deep appreciation for food and Mexican cultural traditions. Inspired by his mother's commitment to authenticity, Kaelin recognized the transformative power of cooking.

Inspired by his mother's commitment to authenticity, Kaelin recognized the transformative power of cooking. He values growing his own produce and sourcing quality ingredients, a practice he learned on his father's tomato farm.
Kaelin began his culinary career in 2010 as a line cook at Omni La Mansion del Rio in San Antonio, TX, progressing to lead line cook at Omni's Mokara Hotel and Spa by 2012. He advanced as a sous chef at Hugo's and Caracol in Houston, TX, then as executive chef at Bajo Sexto Taco in Nashville, TN, located in the Country Music Hall of Fame. Seeking new challenges, he staged at renowned restaurants like Blue Hill at Stone Barns, Eleven Madison Park, and Noma's pop-up in Tulum, MX. By 2018, Kaelin served as a Chef Consultant at the Michelin-starred Oxomoco in Brooklyn, NYC, and later opened La Calenda, an authentic Mexican restaurant by Chef Thomas Keller in Yountville, California.
Kaelin's journey has now led him to Seasons of My Heart Cooking School, where he has joined as a partner and CEO, bringing his passion for Mexican cuisine and commitment to authenticity.
