Explore Andalucía: A Culinary Tour Across Southern Spain
Embark on a captivating journey through the heart of Andalucía, where vibrant culture, rich history, and unforgettable cuisine come together. From the lively streets of Sevilla to the rolling vineyards of Jerez, the stunning white villages, and the breathtaking Alhambra in Granada, this tour offers an immersive experience into the flavors and traditions of Southern Spain.
We begin in Sevilla, where we stay in the heart of the city, allowing us to soak in its picturesque streets, stunning parks, and historic churches. A hands-on cooking class introduces us to regional specialties, including salmorejo, tapas, and pastries, while a deep dive into the city’s food scene takes us through bustling markets and the best churros spots. One of the highlights is an olive oil tasting at a historic hacienda, which has been producing olive oil for over 200 years. We learn about the entire process, from the grove to the bottle, before enjoying a beautiful lunch at this breathtaking estate.
Jerez and Cádiz: Seafood, Sherry & Showmanship
Traveling to Jerez, we witness the magnificent Arabian horses perform at one of the world’s finest equestrian academies. A visit to one of the oldest sherry bodegas in the world offers us a guided tasting of Jerez’s renowned fortified wine, paired with Andalusian delicacies.
In Cádiz, we explore the city’s historical museum, climb the bell tower of the Cathedral for sweeping views, and indulge in tapas at one of the region’s most legendary restaurants. In the nearby beach town of Sanlúcar de Barrameda, we visit Susana’s dear friend Rocío for an exclusive manzanilla wine tasting, followed by a seafood feast by the shore.
We take a private tour of a church, admiring its rare collection of gold and silver artwork, then meet cloistered nuns to purchase their famous handmade dulces.
Culinary Gems of Andalucía’s White Villages
Next, we travel through Andalucía’s famous white villages, where we visit Suco, an old family friend of Susana, who introduces us to local winemakers, cheesemakers, olive oil producers, chefs, and the artist José Hinojo Velásquez.
In Ronda, we stay in this dramatic hilltop town and dine at a Michelin-starred restaurant, taking in stunning views of the deep gorge and surrounding landscapes.
As we head toward Granada, we stop in a charming village to experience a unique organic caviar tasting, paired with champagne or vodka. This sustainable, locally produced delicacy is a true hidden gem of Spain.
The Magic of Granada
Our journey concludes in Granada, where we visit the magnificent Alhambra, a breathtaking architectural masterpiece blending Andalusian and Moorish influences. Granada’s vibrant culture, incredible food, and lively markets make it the perfect finale to our adventure. With its mix of Spanish and Moorish heritage, Granada feels like a bridge between Europe and North Africa. No visit to this region would be complete without flamenco, so we end the trip in local taverns, where music and dance thrive in their most authentic form.

Kaelin Ulrich
Kaelin, the son of famed chef and the founder of the Seasons of My Heart cooking school Susana Trilling, was raised in Oaxaca and developed a deep appreciation for food and Mexican cultural traditions. Inspired by his mother's commitment to authenticity, Kaelin recognized the transformative power of cooking.

He values growing his own produce and sourcing quality ingredients, a practice he learned on his father's tomato farm.
Kaelin began his culinary career in 2010 as a line cook at Omni La Mansion del Rio in San Antonio, TX, progressing to lead line cook at Omni's Mokara Hotel and Spa by 2012. He advanced as a sous chef at Hugo's and Caracol in Houston, TX, then as executive chef at Bajo Sexto Taco in Nashville, TN, located in the Country Music Hall of Fame. Seeking new challenges, he staged at renowned restaurants like Blue Hill at Stone Barns, Eleven Madison Park, and Noma's pop-up in Tulum, MX. By 2018, Kaelin served as a Chef Consultant at the Michelin-starred Oxomoco in Brooklyn, NYC, and later opened La Calenda, an authentic Mexican restaurant by Chef Thomas Keller in Yountville, California.
Kaelin's journey has now led him to Seasons of My Heart Cooking School, where he has joined as a partner and CEO, bringing his passion for Mexican cuisine and commitment to authenticity.
