The island of Sicily has long been a crossroads of civilizations, shaped by its strategic location on Mediterranean trade routes. Influences from ancient empires have left their mark on its culture, landscapes, and, most notably, its cuisine. This journey takes us from the vibrant streets of Palermo to the historic city of Catania, offering an immersive experience in Sicily’s rich culinary and cultural heritage.

Exploring Palermo and the Slow Food Movement
Our adventure begins in Palermo, where we explore the city’s lively markets, stunning churches, and historical landmarks. We stay in a beautiful boutique hotel in the heart of the city, allowing easy access to its vibrant streets and culinary treasures.
One of the highlights is a private cooking class with a Duchess in her elegant palace, where we’ll learn traditional Sicilian recipes. We’ll savor fresh cannoli from a centuries-old convent bakery and dive into the island’s Slow Food movement, visiting artisanal cheese producers, wheat growers, and fishermen who help preserve Sicily’s culinary traditions.

Hands-On Culinary Experiences
Sicily’s culinary delights are at the heart of our experience. We’ll go truffle hunting with an expert, taste fresh ricotta made by a traditional cheesemaker in a remote countryside hut, and take part in an olive oil tasting. A stop in Modica offers the chance to learn about the island’s famous stone-ground chocolate at a top bean-to-bar chocolate maker.
At a local cooking school, young chefs will guide us through a hands-on Sicilian cooking class under the instruction of our friend, Chef Mario Traina. Throughout the trip, we’ll indulge in Sicily’s signature dishes, from caponata and timballo to busiate pasta made with ancient grains. We’ll sample an incredible selection of Sicilian wines, fresh seafood, local sheep’s milk cheese, and the delicate, must-try Zabbina.
Historic Sites, Countryside & Coastal Beauty
Throughout our journey, we’ll explore Sicily’s stunning landscapes and historic sites. In Agrigento, we visit the breathtaking Greek temples and gain insight into the island’s layered history before settling into a charming countryside estate. In Trapani, we tour the striking salt flats, followed by a wine tasting in Marsala. We’ll also visit the picturesque town of Noto, famous for its granita, where we’ll enjoy a tasting at one of the world’s most renowned pastry shops.
In Catania, we stay in a historic hotel near the city’s best fish market before heading to Taormina, where we’ll enjoy a seaside lunch in the picturesque bay of Giardini Naxos and relax in a coastal retreat.

Kaelin Ulrich Trilling
Kaelin, the son of famed chef and the founder of the Seasons of My Heart cooking school Susana Trilling, was raised in Oaxaca and developed a deep appreciation for food and Mexican cultural traditions. Inspired by his mother's commitment to authenticity, Kaelin recognized the transformative power of cooking.

We are usually able to accommodate dietary restrictions. Please let us know of any requests or allergies when registering for the tour.

You will have ample opportunities to shop in the markets, when visiting artisans, and during your free time. There are ATMs and currency exchanges near the hotel.

Once you pay in full, we will share the itinerary with you.

A detailed letter with a packing list will be sent, together with the itinerary for the course a few weeks before your departure.

You should receive an email confirmation every time you make a payment, typically within a week of receipt, if paying by check.

If Seasons of My Heart cancels the course, all course fees paid directly to Seasons of My Heart will be refunded. There is no charge to transfer any fees paid to another course. We try to allow as much time as possible for student registration before canceling a course. Please check with us to see how the registration is progressing before purchasing non-refundable airline tickets. You will be notified at least 6 weeks prior to the course if we need to cancel. We also strongly encourage trip insurance in case of unforeseen events.

If you are unable to join us:
A partial refund, less $ 300 USD will be given. (excluding the single supplement, which will be reimbursed in full) will be given if the participant cancels 61 days or more in advance.
A refund of fifty percent of the total price paid thus far will be given, unless the space is filled by someone else. Then a partial refund, less $300 will be given. (excluding the single supplement, which will be reimbursed in full) will be charged if a participant cancels 60 to 30 days prior to the course.
When the cancellation occurs between the 29th day to the first day of the course, no refund will be given unless the space is sold to another participant. If the space is filled, then a partial refund, less $300 will be given. Cancellations will be analysed on a case by case basis, as long as we are notified by writing.
If applicable, the single supplement (less any penalty applied by the hotel, if any), will always be refunded.
NOTE: A written notification must be received prior to refund
