A Culinary Adventure

Our culinary journey will take us to world-class restaurants, charming bakeries, and authentic street food stalls. We'll savor the best of Mexico City's street food, including internationally acclaimed tacos, and explore local markets to sample exotic fruits and learn the stories behind traditional ingredients. You’ll get to indulge in traditional Mexican dishes, explore new culinary movements, and enjoy cooking classes led by local chefs.

One special experience includes a visit to a master chocolatier, where we'll learn about traditional and avant-garde desserts and prepare classic Mexican antojitos using the rich and diverse ingredients found in Mexico. To top it all off, we'll celebrate with a mariachi serenade, dancing, and delicious food at a family gathering hosted by a local chef.

Cultural Gems

We'll take a walking tour of downtown Mexico City, uncovering the fascinating history of one of the oldest cities in the Americas. We'll visit Bellas Artes to admire murals by Mexico's most renowned painters and explore other iconic landmarks like the Zócalo, and the Frida Kahlo Museum in the charming Coyoacan.

At Teotihuacán, a UNESCO World Heritage Site, we'll explore the ancient pyramids with expert guides and learn about pulque, a pre-Hispanic drink, as well as the famous barbacoa. This traditional dish involves slow-cooking lamb underground in agave leaves for 16 hours until it is perfectly tender, served with fresh tortillas and its flavorful consomé.

A magical highlight of our trip is the boat ride on a trajinera through the canals of Xochimilco, another UNESCO World Heritage site. We'll learn about sustainable agricultural techniques on the ancient chinampas (floating gardens) and enjoy a special breakfast featuring fresh, organic ingredients harvested straight from the gardens.

Meet your Guide

Kaelin Ulrich

Kaelin, the son of famed chef and the founder of the Seasons of My Heart cooking school Susana Trilling, was raised in Oaxaca and developed a deep appreciation for food and Mexican cultural traditions.  Inspired by his mother's commitment to authenticity, Kaelin recognized the transformative power of cooking.

He values growing his own produce and sourcing quality ingredients, a practice he learned on his father's tomato farm.

    Kaelin began his culinary career in 2010 as a line cook at Omni La Mansion del Rio in San Antonio, TX, progressing to lead line cook at Omni's Mokara Hotel and Spa by 2012. He advanced as a sous chef at Hugo's and Caracol in Houston, TX, then as executive chef at Bajo Sexto Taco in Nashville, TN, located in the Country Music Hall of Fame. Seeking new challenges, he staged at renowned restaurants like Blue Hill at Stone Barns, Eleven Madison Park, and Noma's pop-up in Tulum, MX. By 2018, Kaelin served as a Chef Consultant at the Michelin-starred Oxomoco in Brooklyn, NYC, and later opened La Calenda, an authentic Mexican restaurant by Chef Thomas Keller in Yountville, California.

    Kaelin's journey has now led him to Seasons of My Heart Cooking School, where he has joined as a partner and CEO, bringing his passion for Mexican cuisine and commitment to authenticity.
