Salsa Cruda de Piña
Fresh Pineapple Hot Sauce
Had a craving to make a salsa cruda with a more creative slant using fresh pineapple and raw tomatillos instead of grilled or boiled, which is the usual case here in Oaxaca. I combine them with tomato, onion, green chiles, and cilantro, which make up the traditional ¨a la Mexicana¨ ingredients. You can try this with pork or chicken tacos, but we found it great with fish as well!
Ingredients
7 tomatillos, cubed (1 cup)
1 cup of fresh pineapple, cubed
1 cup ripe tomatoes, cubed
3 chiles serranos, roasted, peeled and seeded, finely chopped
¼ medium white onion, finely chopped
2 tablespoons cilantro leaves, finely chopped
½ teaspoons sea salt, to taste
2 tablespoons pineapple juice
Method
In a small bowl mix together all the ingredients, season with salt, and mix in the pineapple juice. Serve at room temperature.
